Bollinger

Founded in 1829 in the village of Aÿ, in the Champagne region  of France, Bollinger was established by Athanase de Villermont, Paul Renaudin, and Jacques Bollinger. Jacques, a German immigrant, played a key role in shaping the brand, and eventually, it was his name which became synonymous with the house.

In 1854, Jacques Bollinger married Louise-Charlotte, who managed the house after his death in 1884, beginning a tradition of strong women in Bollinger’s history. Later, in 1918, Lily Bollinger, another key figure, took over following the death of her husband, Jacques Bollinger (the grandson of the original Jacques).

Precise and vibrant, with an impressive mid-palate weight, this Champagne seamlessly integrates concentrated red apple and pink grapefruit flavours with layers of hazelnut and a toasty complexity. The finish is strikingly long and marked by a refined saline character. Whilst offering immediate drinking pleasure, its structure ensures graceful ageing in the bottle, promising even greater depth over time.
Perfect as an aperitif or with a rich dish such as Iberian ham or foie gras.
2019 was a hot year which made for a hot, dry vintage. Alternating periods of hot and cold weather began in winter, with temperatures rising to 20°C in February. In April and May, spring frosts hit 1000ha of vineyards in Champagne, which mildly affected Bollinger’s vineyards in Aÿ and Cuis. This spring weather gave way to rainy conditions, forcing the Maison’s teams to be vigilant faced with the threat of mildew. Flowering was delayed by these changeable weather conditions, which were followed by heat waves and are record high temperature of 41°C on the 25th of July. Sunburned grape clusters reduced yields still further and drought conditions during August and September encouraged grapes to ripen quickly. Despite the difficult weather conditions through out the year, the harvest was remarkable. Thanks to their crop of extremely healthy grapes, Bollinger could expect a beautifully ripe vintage which gave rise to a delicate, complex wine. More than 50% vinified in oak barrels. Decanter, November 2024: "Baked apricot, scorched orange and soft raspberry, with tasty nougat, cocoa and dried pear ageing characters. A striking wine of persistent, tightly packed quality with terrific mid-term potential."
