This is the great, noble grape of Burgundy, which at its best produces some of the best wines in the world. It is difficult to grow as the grapes, which are relatively thin-skinned and tightly bunched together, are prone to a host of vine diseases, very susceptible to over cropping and, if grown in excessive heat, will ripen too quickly. Pino Noir grapes perform well on well-drained, deep limestone based subsoils as are found on Burgundy's Côte d'Or, where at its best it is smooth and richer than Cabernet Sauvignon with less tannin. It has raisin like flavours with undertones of black cherry, spice & raspberry. When mature, the best Pinot Noir wines develop a sensuous, silky mouth feel with the fruit flavours deepening. Pinot Noir also plays a key role in making Champagne.
