Pedro Ximenez is a white Spanish varietal, which comes from the Andalucía region, and is used to make sweet style Sherry wines that are luscious and rich with a prolonged finish. They have relatively high-sugar levels which, when combined with the warm weather of the Andalucía region, allows producers to sun dry these grapes - a traditional way to naturally concentrate sugars in the grapes, in order to produce intensely sweet fortified wines. However, in recent years, Pedro Ximénez vines have been planted further north in places such as Priorat, Montsant and Valencia to use in white grape blends.
