Pecorino is an early-ripening, light-skinned white wine grape used in the Marche, Abruzzo, Liguria, Tuscany, Umbria and Lazio regions of Italy. A classic Pecorino wine is dry and minerally, straw-yellow in colour and has an elegant floral bouquet, sometimes with a hint of spice. Pecorino wine is quite full bodied with moderate acidity and minerality and flavours of yellow fruit, ginger and white pepper. Because of these characteristics, Pecorino wines are best paired with Asian cuisine, rich salads, seafood, risotto and grilled cheese.
