Palomino, is the primary grape variety for Sherry production, grown in southern Spain. The fact that it can withstand drought well and produces a reliable crop of neutral flavoured, slightly low acid, low sugar grapes whose wine may oxidise easily, makes it the perfect raw material for sherry. The chalky and lime-rich soils of Jerez allow Palomino to achieve the must weights required for Sherry production. In South Africa, California, and Australia it is fortified to make sherry-style wines.
