Grillo is a Sicilian white grape variety most famous for making the island's fortified Marsala wines. Grillo grapes can withstand very high temperatures and drought and enjoy high alcohol content, making it perfect for being left on the vine long enough to produce sweet dessert wines. Despite the decline in Marsala’s popularity it is still widely planted in Sicily, and is now used mostly in a variety of still white wines, both varietal and blended. In fact Grillo, when vinified to a high standard, produces a fresh, light white wine with nutty, fruit-driven flavours, lemon and apple.
